Pizzerian for the Day





So it was this fine Sunday...was still thinking what to prepare for lunch, I went to the kitchen, it had been a tiring day the day before, I was not in form for making an elaborate dish and found some leftover bread from yesterday.
Idea! why not stuff the bread with pizza fillings? ( I had no time to make a pizza dough and wait for it to rise)

1. Cut the bread- I did three transverse slices from each bread ( you can do 2 slices if you prefer a hefty filling)




2.   In a small bowl,mix around 10ml of liquid milk, 2 tablespoons of olive oil , black pepper and oregano

3. Decide on your filling...you can put just about anything. I put whatever was in my fridge at that time. 2 bell peppers, cherry tomatoes and an eggplant.


4.  Chop them into small pieces . You can dice or slice according to your choice. I went for diced peppers and sliced eggplant and tomatoes to keep the round shapes. I also threw in some maize. you can  also go for meat, chicken or fish. You just need to cut them in small pieces, fry them and keep aside to cool down.




5. Coat your slices with the milk, oregano and pepper mixture. (This softens the bread as it soaks the mixture up)



6. Now for the fun part !!!
Layer the slices with a good amount of ketchup mixed with oregano. Start placing the chopped vegetables on top.


7. Start mixing and matching with your fillings! Its a pop of colours!



8.  Prep your tray with some cooking spray and place the slices on it. Then sprinkle some cheese, paprika and oregano on top ( oh yes I looove oregano)




9. Place the tray in the oven and bake at 180 degrees Celsius for 15 mins. And Voila! Express Pizza ready!! Bon apetit!!
