Let's go Tangy - Tamarind Rice Recipe
Tamarind Rice in 5 easy steps!!
It was a Friday, I had some leftover rice at hand. My first thought was toss it into the pan and make fried rice. But my tastebuds wanted otherwise! so I looked up the recipe for Tamarind Rice which I thought would be time consuming but surprisingly was not!!
So here you go! If you have some leftover rice like rice...tie your apron and look for the rest of the ingredients!
Ingredients:
Rice
Curry leaves
Peanuts
Cashews
Haldi/turmeric
Salt
Mustard seeds
Asofoetida/hing
dried red chillies
coriander
Methi
Tamarind paste
Method:
1. I already had precooked rice. (Around 4 cups)
2. Add some oil or ghee and roast the peanuts and cashews. wait till they get a light brown colour and a roasted aroma fiils your kitchen. Remove the roasted nuts and set aside
3. In the remaining oil fry the chana dal, curry leaves, dry chillies, mustard seeds and methi. Then add one and half teaspoon of haldi
4. Mix in the tamarind paste.
5. Add in the precooked rice and stir. Sprinkle the coriander.
6. Lastly add the roasted nuts. I usually add nuts last so that they are still crunchy while serving.
Serve hot and enjoy the tangy tamarind flavour with the crunchy nuts!
