Motichoor Laddoo - Rakhi Special

Try out some homemade motichoor laddoo!

This rakhee make some motichoor laddoo to make the brother-sister relationship sweeter than ever!!!

Step 1 : Preparing the syrup
In a pan put some water to boil, add sugar (for 3 cups of water I add one and half cup of sugar).
Stir continuously till it thickens and has a thready consistency.
Add cardamom powder when it is ready and switch off the flame.

Step 2: Preparing the batter

Mix the besan with some water, add the water little by little so that the batter has a flowing consistency...it shoud not be too thin nor too thick.

To make different colours, add portions od the main mixture to different bowls and add few drops of food colour and mix. I used orange and green. You can add some red also to jazz it up.

Step 3: Making the Boondis

Heat oil in a deep frying pan. When the oil is moderately hot, take a perforated sieve or ladle and place it above the oil. Then with a spatula take some batter and add on the sieve or ladle.
Press on the ladle with the spatula so that the batter passes through the perforations and falls in the oil. Fry for 45 seconds to 1 minute.
With a bigger ladle remove the fried Boondis and set aside.

 Step 4: Mixing it up
Take the sugar syrup (if it's not hot, heat it under low flame) and slowly add to the fried boondis and cover it. The syrup should seep in the Boondis and soften them.

After around 15 minutes the Boondis will have soaked up the sugar syrup. Mix them up to blend all the coloured boondis.Take some ghee and rub on your palm and make round laddoos.

If you don't like big Boondis, you can blend the mixture for few minutes before shaping them. Or you can mix and match for example only blend the yellow Boondis and keeps the green or red ones big. Below is the blended version.

Happy Rakhi!!
