Potato Pinwheels
Some confinement snacks is not bad at all!
For today let's try Potato Pinwheels - an easy peasy crispy afternoon snacks.Gather your ingredients:
- 1 cup of all purpose flour
-2 tbsp of semolina (greau)
- 1/2 tbsp of salt
- 3 tbsp of oil
- Water as needed
For the filling:
- Potatoes
- Finely chopped coriander
- Jeera powder (petit anis en poudre)
-Ajwain
-Chili powder
-Lemon juice
- 1 teaspoon olive oil
-Salt to taste.
Method:
1. Sieve 1 cup of flour in a mixing bowl, add the semolina,salt and mix. Then add the oil and water as needed to form a dough.
2. Cover the bowl and let it rest for 20 mins.
3. Meanwhile let's prepare the filling!
You can use boiled potatoes or microwave them. I used 4 medium sized potatoes which I coated with some oil and microwaved for 4-5 minutes. When the peel starts coming off and the potato is soft you know its ready!
4. Use a fork or a masher and mash the potatoes and throw in all the spices and herbs. Add salt according to your taste ans and some olive oil to help with the spreading.
5. By now the dough is ready to work with. Dust it with flour and roll it flat.
6. Next spread the potato filling evenly on the dough and start rolling from the edge.
7. Cut across around 1/2 -1 inch thick depending on your choice.
8. Next make a batter by missing flour and water. It should be a bit runny just to lightly coat the pinwheels.
9. Gently dip the pinwheels in the batter and fry on medium flame till it becomes golden brown.
10. Serve piping hot with chutney.
